Christmas goodie trays wouldn't be complete without a molasses cookie!
I always used to make roll out ones and decorate them. The last few years I just make some crinkles ....so much easier...and dip half in white chocolate to make them look festive. They are soft and SO tasty with all those spices. The house smells wonderful when you bake them.
This year I found these cute holly and berry sprinkles, so I added them...so fun!
Molasses Cookies
1/4 c. sugar
1/2 c. brown sugar
1 and 1/2 sticks of butter, room temp (3/4 c.)
1/4 c. molasses
1 egg
1 tsp. vanilla
Beat the sugars and butter well. Add the molasses, beat again, then add egg and vanilla beating it all well.
In another bowl add the dry ingredients together:
2 and 1/4 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. ginger
1 1/2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
1/4 tsp. salt
Slowly add the dry ingredients to the wet until well combined. Form into a large ball.
Chill in frig for an hour or so. Then roll into 1 inch size balls and roll in sugar. Place on parchment lined baking sheets and bake at 350 for 10 to 12 minutes. Cool completely and dip half into melted white chocolate, add sprinkles if desired. Makes about 2 1/2 dozen cookies.
