Pumpkin Cookies with Brown Butter Frosting



It's a must to make a batch of these delightful cookies every fall. First off, the house smells terrific, it makes a ton, they freeze well, and everyone loves them.

But of course, the best part is the taste. Anything with brown butter is a treat! The cookies are soft, very moist, and have a pleasant pumpkin flavor with a hint of cinnamon.  Top it off with the frosting, and you have one great cookie!

Pumpkin cookies


1 1/4 c. butter,softened
1 c. white sugar
1/2 c. brown sugar
2 eggs
1 1/2 c. pumpkin
1 tsp. flour
1 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
2 1/4 tsp. cinnamon
1/2 tsp. nutmeg
1/8 tsp. ginger
3 c. flour
Mix sugars and egg, add pumpkin. Stir in dry ingredients. Drop by rounded spoonfuls onto greased cookie sheets. Bake at 350 for 12-15 minutes. Cool before frosting.

Brown Butter Frosting 

1/2 c. butter, melted and browned on medium heat ( you can read about browning butter here)
2 c. powdered sugar
1 tsp. vanilla (milk if needed)

Brown butter, add vanilla and powdered sugar. Frost cooled cookies.
